When I first moved out of my parents’ home in my early twenties, mom provided me with a little handwritten book containing recipes of things that I enjoyed and might enjoy making now that I was on my own. This happens to be her tummy filling baked chocolate pudding recipe:
Baked Chocolate Pudding
- 250ml cake flour
- 5ml baking powder
- 20ml cocoa
- 1ml salt
- 55ml (50g) margarine
- 200ml sugar
- 1 large egg
- 3ml vanilla essence
- 170ml milk
Sift dry ingredients.
Cream margarine and sugar. Beat in eggs and vanilla essence.
Sift dry ingredients and add alternately with milk into margarine mixture. Mix well. Spoon into a greased 20cm pudding dish or large soufflé dish.
250ml brown sugar
Mix all ingredients. Microwave for 2 minutes on High.
Mix well and cook for another 3 minutes on High.
Pour the sauce over the batter. Cook on Medium for 10-12 minutes.
Cover the pudding as soon as it comes out of the oven and stand for 3 minutes. Serve with custard, cream or ice-cream.
